Thai restaurant scores 90 red points. Here are Thurston food safety inspections for Sept. 18

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

E-San Zap Café

9323 Martin Way E., Lacey

Sept. 9: 90 red points; 8 blue points.

Comments:

  • Active managerial control was not present for the first hour of the inspection.
  • A hand-wash sink by a three-compartment sink was blocked.
  • Cooked rice and tofu was cooled improperly. TCS foods must be cooled at 2-inch depths or less, uncovered, until the foods reach 41 degrees or below.
  • Thai peanut sauce and rehydrated noodles were stored at room temperature.
  • Products in the prep cold hold were measured at 55 degrees rather than at or below 41 degrees.
  • No probe thermometer was available during the inspection.
  • Multiple items were being cooled at the facility that were outside of their risk category. Establishments must operate under the conditions of their permit at all times.
  • In-use utensils were stored in room temperature water. Such utensils must be stored in cold water (41 degrees), hot water (135 degrees) or outside on a clean surface.
  • An in-use sanitizer solution was not strong enough.

El Sitio

116 Legion Way SE, Olympia

Sept. 10: 75 red points; 17 blue points.

Comments:

  • A person-in-charge was undesignated. Active managerial control was not being performed.
  • The bar sink did not have hand towels.
  • Whole shell raw eggs were stored above ready to eat foods.
  • Improper cooling of various food items. Potatoes were wrapped despite still being warmer than 41 degrees. Large amounts of salsa were cooling on a counter. TCS food items must be cooled uncovered in shallow containers, no greater than 2 inches.
  • TCs foods needed to be kept in temperature control or time should have been used as control.
  • The menu lacked a proper consumer advisory.
  • The establishment was cited for improper pest control and directed to contact professional pest management.
  • A sanitizer solution was not prepared at the time of inspection.
  • A hand-sink did not have hot water.
  • The flooring in the bar was in disrepair.

Panda Express

1320 Marvin Road NE, Lacey

Sept. 3: 40 red points; 0 blue points.

Comments:

  • Orange chicken was measured at 112-136 degrees in the hot hold line. Hot held TCS foods must be at 135 degrees or above.
  • Cut kale and cooled rice was measured at 43-47 degrees. Cold held TCS foods must be at 41 degrees or below.
  • No probe tip thermometer was available during the inspection.

Emerald City Smoothie

1140 Galaxy Drive NE, Lacey

Sept. 3: 25 red points; 8 blue points.

Comments:

  • Pitchers were observed stored in a hand sink. Hand sinks must be kept clear at all times.
  • Non-dairy milk was stored at 47-51 degrees. Cold held TCS foods must be kept at 41 degrees or below.
  • The establishment did not have a thermometer on hand to monitor food temperatures.
  • A measuring cup for ice was deposited in an ice bin with the handle touching the ice.
  • A sanitizer solution for dishwashing and wiping towels was too strong as prepared.

Comments:

  • Employees had expired or invalid food worker cards.
  • The hand wash sink was not properly supplied with soap and paper towels.
  • The establishment did not obtain approval of a procedure to heat and cool meatballs for kabobs.

Comments:

Comments:

  • A hand-washing sink had objects stored in it. Hand-washing sinks must be clear of obstructions.

  • Containers of grilled chicken and cooked tofu were not date marked.

Comments:

Comments:
