Here are Thurston food safety inspections for Jan. 8

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Fatso’s Bar and Grill

3205 Martin Way E, Olympia

Jan. 6: 45 red points; 0 blue points

Comments:

  • A two-compartment sink approved for handwashing was filled with dishes in both compartments.
  • A hamburger soup in a walk-in was cooling at a depth greater than 2 inches.
  • Multiple deli meats in a prep top cooler were at 45-47 degrees for those that were above fill line. The remaining foods were less than 41 degrees.

Fire Creek Ale House at Capital City Golf Course

5225 Yelm Highway SE, Lacey

Jan. 6: 40 red points; 0 blue points.

Comments:

  • Food workers reported that they did not take daily temperatures. They also did not demonstrate active managerial control and person-in-charge knowledge.
  • Soups were cooled in 4-inch inserts in the walk-in cold hold. Heat-treated broccoli was covered in a two-door reach-in cold hold in greater than 2-inch depths with visible condensation on the cover. TCS foods must be cooled in 2-inch depths or less and uncovered until they reach 41 degrees or below.
  • Liquid egg was stored at 48-51 degrees in a prep unit. Cold held TCS foods must be at or below 41 degrees.

Jan. 6: 35 red points; 0 blue points.

Comments:

  • Cut cabbage on a shelf measured 47-48 degrees. Macaroni salad in a prep unit measured 43-44 degrees. Cold held TCS foods must be at or below 41 degrees.
  • The consumer advisory for eggs lacked a disclosure statement. A proper consumer advisory is required for animal foods that can be served raw or undercooked.
  • There inspector found non-continuously cooked chicken in the walk-in. Non-continuously cooked chicken requires a written procedure that’s approved by the health department.
  • The establishment lacked a variance for serving or selling fermenting kimchi with cut cabbage at room temperature.

244 Madrona Beach Road NW, Olympia

Jan. 3: 30 red points; 0 blue points.

Comments:

  • A line cook was observed using a gloved hand to handle raw beef. They changed gloves without washing their hands. Handwashing is required when changing tasks.
  • Hot held mashed potatoes measured 130 degrees. Hot held TCS foods must be at or above 135 degrees.

Dec. 30: 25 red points; 5 blue points.

Comments:

  • Multiple products in open-air hot hold measured less than 135 degrees. Hot held TCS foods must be at or above 135 degrees.
  • Warewash rinse temperatures were below 160 degrees.

Jan. 2: 25 red points; 0 blue points.

Comments:

  • The inspector observed tofu at room temperature. The establishment must use time as a control if holding food at room temperature.

Airport Golf Center

Food Service Establishment

Jan. 2: 20 red points; 0 blue points.

Comments:

  • A handwash sink next to a three-compartment sink did not have hot water from a mixing valve. Handwash sinks must have hot and cold water supplied.
  • The establishment washed produce without an approved procedure.

Ilk Lodge

422 Legion Way SE, Olympia

Jan. 2: 15 red points; 7 blue points.

Comments:

  • The person-in-charge had trouble demonstrating knowledge and had no Serve Safe certified food protection manager certificate.
  • The establishment operated above the risk category it was approved for.
  • A warewashing machine did not dispense sanitizer per the manufacturing instructions.
  • A large amount of grease was observed on the floor in the back of a storage area.

3205 Willamette Drive NE, Lacey

Jan. 3: 15 red points; 0 blue points.

Comments:

  • Sliced tomatoes in a countertop prep unit measured 45 degrees. TCS items in a one-door reach-in measured 44-45 degrees. Cold held TCS foods must be at or below 41 degrees.
  • The facility turned off water for a prep sink that should have been used for produce washing.

Comments:

  • A food worker did not have a valid food worker card.
  • Chicken nuggets in an open-air cold hold measured above 41 degrees. Cold held TCS foods must be at or below 41 degrees.
  • A hand-sink by three-compartment sink did not drain.

Comments:

  • A handwashing sink was not equipped with disposable paper towels.
  • Eggplants in a cardboard box were stored on the walk-in cooler floor. Food items must be stored at least 6 inches above the floor.

Comments:
