Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:
- Produce washing was conducted in a handwashing sink. Establishments must use designated sinks to avoid potential cross contamination.
- White rice was observed cooling in a walk-in cold hold while covered and at a depth greater than 2 inches. The rice measured 48 degrees. TCS foods must be cooled uncovered in 2-inch depths or less until it reaches 41 degrees or lower.
- Sushi rice was not time marked with 4-hour limit as required when using time as a control.
- A kitchen sanitizer solution was too weak as prepared.
Holiday Inn Express and Suites

Food Service Establishment
Jan. 23: 50 red points; 5 blue points.
Comments:
- No person in charge was present. Food workers did not know proper cooling procedures and did not demonstrate active managerial control of risk factors.
- Raw bacon was stored above ready-to-eat foods in a three-door unit. Raw animal products must be stored below and away from ready-to-eat foods.
- Sausage gravy and oatmeal were cooled while covered with visible condensation in 2-inch depths inside a three-door unit. TCS foods must be cooled uncovered in 2-inch depths or less until it reaches 41 degrees or lower.
- No thin-tip thermometer was present in the facility.
- Ready-to-eat apples on a breakfast line required a placard. The facility could have also installed a prep sink as a condition at pre-opening inspection. The inspector directed the establishment to cease serving apples until a prep sink is installed or only serve pre-washed apples.
- No in-use sanitizer was prepared at the time of the inspection.
Super Buffet

Comments:
- A person in charge failed to instruct a food worker to monitor hot-holding temperatures.
- Prawns and bacon-wrapped chicken were found below the proper hot-holding temperature of 165 degrees.
- Wiping cloths were not regularly used on food contact and hand contact surfaces.
Souru Teriyaki

Comments:
- Two food worker cards were expired.
- The hot water valve on a hand-washing sink did not work.
- Cold-held salad bowls measured 48-51 degrees in a one-door cooler. Cold held TCS foods must at or below 41 degrees.

Comments:

- A sheet pan of cashews was stored on the floor.
