Mini Market gets 60 red points. Here are Thurston County food inspections for March 5

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection

Feb. 25: 60 red points; 7 blue points.

Comments:

  • The person-in-charge did not correctly answer questions regarding hand washing.
  • A food worker card had expired.
  • A hand sink was completely blocked and not used.
  • Raw eggs were stored above ready-to-eat food. Raw foods must be stored below and away from ready-to-eat foods and by their cooking temperature.
  • The temperatures in the back, glass cold hold were 45 degrees. Cold held TCS foods must be kept at or below 41 degrees at all times.
  • A thermometer in a two-door cold hold unit was broken.
  • Medicine was stored above a food preparation area. Chemicals and medicine must be stored below and away from food preparation areas.
  • Grab-N-Go meals were prepared at the facility without approval.
  • Grab-N-Go meals were not properly labeled.
  • The ceiling by a 3-compartment sink and a cold hold unit was leaking.

Comments:

  • A person-in-charge was unable to present food worker cards.
  • A handwash sink was not stocked with soap or paper towels.
  • Cream cheese was stored at room temperature (64 degrees) with no time as a control plan. TCS foods must be stored under time or temperature control for safety.
  • No probe tip thermometer and no ambient thermometer was present in a homestyle fridge with TCS foods.

Comments:

  • The person-in-charge did not monitor or correct ice bath cooling procedures for a broth.
  • Three large stock pots were set up in bins with water and no ice. The amount of ice for cooling must be equal to the volume of food cooling and up to the level of the food. Two pots of broth in a walk-in cold hold that were cooled from the previous night measured 45-46 degrees.

Comments:

  • A food worker did not was his hands prior to wearing gloves.
  • An in-use knife was improperly stored on a countertop. In-use utensils must be stored by an approved method such as changing dry utensils every four hours, storing them in ice water at or below 41 degrees or storing them in hot water at or above 135 degrees.

Comments:

  • Cold held lettuce and sliced tomatoes measured 43 degrees. Cold held TCS foods must measure at or below 41 degrees.
