Asian restaurant scores 55 red points. Here are Thurston food inspections for April 23

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • There was no certified food protection manager on staff.
  • Foods were not properly date marked as required.
  • Noodles were observed rehydrating at room temperature. Once rehydrated, noodles are considered TCS food and must be kept hot or cold.
  • A two-door reach-in cold hold had products that measured 44 degrees. Cold held TCS foods must measure at or below 41 degrees.
  • An in-use chlorine sanitizer was too strong.
  • Non-food contact containers were used for storage.
  • Many food contact surfaces had visible debris build up.
  • Many food contact surfaces needed cleaning and repairs.

Comments:

  • The bar hand-wash sink lacked soap and paper towels.
  • Meats in a steam table and on a stove measured 116-135 degrees and 106-150 degrees. Hot held TCS foods must be at or above 135 degrees.
  • Milk in a prep unit measured 45-46 degrees. Sliced tomatoes on ice measured 41-50 degrees. Cold held TCS foods must be at or below 41 degrees.

Comments:

  • A kitchen hand sink was filled with equipment.
  • Previously frozen rice was observed thawing at room temperature and was going to be left at that temperature all day. TCS foods must be kept hot at or above 135 degrees or cold at or below 41 degrees.
  • A small prep cold hold has TCS food items that measured 50 degrees. Cold held TCS food items must measure at or below 41 degrees.

Comments:

  • Stuffing and dressing were observed cooling in a pot in the walk-in cold hold at depths of more than 2 inches. Proper cooling must be done at 2-inch depths or less.
  • A plan for vacuum packaging meats was not being followed.
  • Several fly trap strips set up near a food prep area were full and due to be replaced. The back screen did not shut fully. Entrances must be controlled for pest management.

Comments:

  • A food worker handled ready-to-eat cilantro with their bare hands.
  • Available probe thermometers were not accurate.

Comments:

  • A bartender was missing a food worker card.
  • A hand sink at the bar was inoperable. All hand sinks were missing soap at the time of inspection.
  • Light was visible under a back door and flies were in the prep area. A fly strip was full above a three-compartment sink. All entrances must be controlled for pests.
