Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:
Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.

- No in-use sanitizer solution was prepared at the time of inspection. A sanitizer solution must be prepared before handling unpackaged foods.
- No paper towels were in the restroom. All hand sinks have to be stocked with soap and paper towels at all times.
- Raw chicken and frozen tornados were at room temperature. TCS foods have to be kept hot, at 135 degrees or above, or cold, at 41 degrees or below, at all times.
- TCS food in the walk-in freezer was at 45 degrees. Cold held TCS foods must be at or below 41 degrees.

- A paper towel dispenser at the back hand sink wasn’t functioning properly at the time of inspection.

- The facility was cited for improper cooling. TCS foods on the counter were in the temperature danger zone, where bacteria can grow most rapidly. TCS foods have to be kept hot, at 135 degrees or above, or cold, at 41 degrees or below, at all times.
- The facility was required to complete a risk control form for the violation, and it’s due May 21.

- Food worker cards weren’t available for review during the inspection. Only one employee held a food handler solutions card. All food workers must possess and maintain a valid WA state food worker card.
- The establishment was cited for repeat red violations for missing food worker cards. As a result, a health inspector will be stopping by within two weeks to verify all workers have their card.
- The facility’s vomit and diarrhea kit was unavailable during the inspection. All food establishments must have a V/D kit available for cleanup to help control the spread of norovirus.

- Raw shelled eggs were observed in the walk-in above ready-to-eat tomatoes. All raw animal products must be stored below or away from ready-to-eat foods.
- Various TCS foods such as lettuce, tomatoes and cheese were at temperatures of 45 to 50 degrees. All TCS foods being held cold must be 41 degrees or less.
White Horse Tavern

- The establishment was cited for having limited preparation of TCS foods. It must submit an updated menu along with food flows for the department to accurately determine the risk category the White Horse is operating under.
- A food worker was observed washing larger food equipment in an improper area. All food surfaces/equipment must be properly cleanable in facilities designated as a 3-compartment ware wash station.
- Vegetable and produce prep must cease at this time due to the risk category and the lack of a designated food preparation sink. Pre-cut veggies are permissible.

- Canned drinks were being stored in the restroom. Some drink boxes were directly on the floor. All food must be stored in a way that prevents contamination, and they must be above ground.
- The establishment uses a large igloo cooler for ice and large cold brewing equipment. These items have to be properly washed, rinsed and sanitized.
- Cold brew was being stored in re-used milk jugs. The establishment must cease using larger equipment items until it has alternate plans for ware washing that are approved. It must also cease using re-used milk jugs for cold brew.
