Here are Thurston County food safety inspection scores for July 23

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.

  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.

  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • The person in charge did not demonstrate active managerial control of risk factors and was directed to obtain certified food protection manager training.
  • A hand-wash sink was not operational and had evidence of broken valves.
  • Cold-held cut lettuce measured 51 degrees; cooked, diced chicken measured 47 degrees, and raw chicken 48 degrees. Cold-held TCS food items must be at or below 41 degrees.
  • An in-use sanitizer chlorine solution was too strong as prepared.
  • A two-door and reach-in cooler measured 49-51 degrees.
  • A diced, cooked chicken was not labeled for datemarking.

Comments:

  • Potatoes were held at room temperature for four hours were not properly marked. The label had fallen off.
  • Milk and egg wash for chicken breading was improperly labeled with a hold time of greater than four hours. TCS foods held under time as a control must be properly labeled and discarded four hours after removing from temperature control.
  • There was no vomit and diarrhea clean-up plan was provided as required at the last routine inspection.

Comments:

  • The person-in-charge did not demonstrate active managerial control of risk factors.
  • TCS foods, cooked noodles were cooled in covered pans.
  • There were pans of chicken, pork and shrimp without date-marking labels.

Comments:

  • The person-in-charge was not able to demonstrate adequate food safety knowledge.
  • Food worker cards were not available on-site and there was one missing food worker card.
  • A kitchen hand sink was blocked and lacked soap. Hand-wash sinks must remain clear and properly stocked.
  • Dumplings in a one-door cold hold unit measured 53 degrees. Cold held TCS foods must be at or below 41 degrees.
  • A ware-wash chlorine sanitizer solution was too weak as prepared.

Comments:

  • An employee had an expired food worker card.
  • Cold-held tofu in a prep unit measured 53-54 degrees. Cold held TCS foods must measure at or below 41 degrees.
  • Two cold hold units had ambient temperatures above 41 degrees.
  • The PH level of sushi rice was not being recorded on logs as required.
