Here are Thurston County food safety inspection scores for July 30
Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:
- The person in charge was observed washing their hands over non-disposable gloves that are only used to wash dishes. They disposed of the gloves, washed their hands and replaced the gloves with disposable ones.
- Utensils and sponges were observed being stored in the front handwashing sink. Handwashing sinks must be free of objects and solely used to wash hands.
- Raw chicken was being stored over tofu in the walk-in cooler. The person in charge rearranged TCS foods according to the hierarchy of storage to avoid cross contamination.
- Containers of cooked chicken weren’t datemarked.

Comments:
- One food worker card was expired and three were available upon request.
- A food worker cutting red meat did not change their gloves and wash their hands when changing tasks and helping a customer.
- Raw chicken was being stored over raw beef and ready-to-eat food. The person in charge rearranged the TCS foods according to the hierarchy of storage.
- TCS foods were not datemarked.
- An in-use sanitizing chlorine solution wasn’t available during the inspection.
- The person in charge was requested to contact the Public Health Department to enroll in Certified Food Protection Manager training.

Comments:
- Food worker cards and a CFPM certificate were unavailable during the inspection. More than half of the workers’ cards were absent, one was expired and one was from an improper source.
- Potential contamination from improper storage. Whole shell raw eggs were being stored above ready-to-eat foods.
- Improper cold holding of TCS foods. TCS foods in cold holding have to be maintained at 41 degrees or lower.
- Plans for a floor mop sink weren’t provided as required.
- Potential contamination during storage and preparation. The interior of the ice machine was dirty with a mold-like substance, and a slicer had visible food debris.

Comments:
- Fried chicken in a hot case was at a temperature between 109 degrees and 148 degrees. All items being hot held must be maintained at 135 degrees or above at all times. The chicken that wasn’t 135 degrees was discarded.

Comments:
- Milk and packaged bacon was warmed than 41 degrees. TCS foods have to be cold held at no more than 41 degrees. The person in charge was directed to move TCS foods back to the stock fridge if temperatures didn’t decrease. Since it was a repeat violation, the person in charge has to verify the temperatures twice a day and send a log to health officials by Aug. 11.
- Cutting boards were being washed, rinsed and sanitized in the prep sink because the 3-compartment sink is too small. The establishment must ensure produce is washed in the morning and that the cutting boards are cleaned at the end of day only.

- The person in charge does not have CFPM training. They must start a course and have certification by Nov. 24.
- The wiping towel for contact sanitizing had no chlorine content. It must be stored in a container of bleach water.

- The in-use sanitizing chlorine solution concentration was too strong and measured above 200 ppm. It was remade and tested at approximately 100 ppm.
