Chinese spot scores 95 red points. Here are Thurston food inspection scores for Aug. 13

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • The person-in-charge was not performing duties to maintain active managerial control.
  • Some employees had expired or absent food worker cards.
  • An employee washed their gloved hands in a food prep sink after handling dirty dishes. The employee then proceeded to handle clean wares twice. Employees must wash their hands after changing tasks.
  • TCS foods on the buffet hot hold line measured less than 135 degrees.
  • The establishment was cited for improper use of time as a control for TCS foods. The sushi bar had time markers based on when they were placed on the line. The time should have been marked based on when rice that was used to make the items.
  • A bleach sanitizer solution was too strong as prepared.
  • A ware washing machine was not properly maintained and lacked a temperature device.

Aug. 6: 80 red points; 10 blue points.

Comments:

  • The person-in-charge did not perform duties to maintain active managerial control.
  • There were multiple expired or invalid food worker cards.
  • An employee resumed food prep after handling raw meats with gloved hands. Employees must wash hands after changing tasks.
  • The establishment was cited for having inadequate hand sinks that were blocked by objects and lacked paper towels.
  • Whole shell raw eggs were stored above ready-to-eat foods. Raw foods must be stored below and away from ready-to-eat foods.
  • In-house cooked and cooled meat was improperly reheated to less than 165 degrees.
  • The menu lacked asterisks for items that are cooked to order or may be served raw.
  • The establishment expanded their menu, equipment and facility size without review or approval.  
  • A sanitizer solution was not prepared at the time of inspection.
  • A warewashing machine was not properly dispensing sanitizer.

Comments:

  • One food worker card was expired.
  • Cooked noodles were wrapped with plastic and cooled in a large, deep pan. TCS foods must be cooled uncovered with a food depth less than 2-inches.
  • Cut cabbage, cooked noodles and cooked chicken in a two-door cooler measured 44-45 degrees. Cold held TCS foods must be at or below 41 degrees.
  • An in-use sanitizing chlorine solution was too strong as prepared.
  • A warewashing machine was not dispensing a chlorine sanitizer.

Comments:

  • Wiping towels were not stored in a sanitizer bucket.
