Pho spot scores 45 red points. Here are Thurston food inspection scores for Aug. 20

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • Cutting boards were stained and deeply cut. The inspector directed the establishment to thoroughly and regularly clean and sanitize the boards.
  • The wiping towels and a container for a sanitizer solution had no sanitizer content.
  • A container on the line with various utensils were bathed in unclean water.
  • Rice noodles were observed cooling while covered at a 3-inch depth. TCS foods must be cooled at a depth of 2 inches or less while uncovered.

Comments:

  • Cold held chicken measured 55-75 degrees. This chicken was not thoroughly cooled. TCS foods must cool completely to 41 degrees at a depth of 2-inches or less while uncovered.
  • Two containers of chicken in a steam table measured 128-131 degrees. Hot held TCS foods must be at or above 135 degrees.
  • The inspector noted evidence of insects at the establishment.
  • In-use wiping towels for disinfecting had no chlorine content. Wiping towels must be used with a sufficiently strong chlorine solution.

  • Cream cheese in a pastry bag measured 65 degrees. This TCS food must be kept cold at 41 degrees or less.

Comments:

  • TCS foods in a single door cold hold measured 48 degrees. Cold held TCS foods must be at or below 41 degrees.
  • Frozen beef was observed thawing in standing water. Thawing must occur under refrigeration or running water.
  • No sanitizer solution was prepared at the time of inspection. An in-use sanitizer solution must be prepared prior to any food handling.

Comments:

  • A handwash sink was blocked by a garbage container. Handwash sinks must be accessible and free of objects.
  • TCS food items in a reach-in cooler measured greater than 41 degrees. Milk measured 45 degrees, almond and oak milk measured 44 degrees.
  • An in-use sanitizer solution was not available during the inspection. The person in charge prepared the solution on the spot.
