Buzz’s hit with 50 red points. Here are Thurston food safety scores for Aug. 27

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.

If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.

Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • Improper separation of raw meats, raw shelled eggs stored above ready to eat foods. Raw animal proteins have to be stored by cooking temperatures with RTE stored above them.
  • No person in charge was present during the time of inspection, and none was available when requested. The certified food protection manager must train and designate persons in charge.
  • Improper cold holding of TCS items, including salad, tomatoes and coleslaw. Fresh minced garlic in butter was being stored at room temperature.
  • Menus were missing consumer advisories.
  • Various cold hold units were missing thermometers.
  • French fries were improperly thawed. They must be under temperature control before use.
  • Food was improperly labeled. No date markings were made on TCS foods.

Comments:

  • The person in charge and food workers lacked food safety knowledge at the time of inspection. They were tasked to obtain safety protection manager training from an approved trainer.
  • Food worker cards were not available upon request.
  • Improper hot holding of meatballs. TCS food shall be hot held at 135 degrees or above.
  • Boxes of TCS foods were being stored on the freezer floor. They must be stored at least six inches above the floor.
  • Sanitizer test strips weren’t available at the time of inspection.

Comments:

  • Cooked pork belly was 57 to 60 degrees in the prep unit. TCS foods have to be properly cooled according to WAC 246-215. They had to be moved to a shallow pan and placed on ice to continue cooling.
  • Sliced cabbage for coleslaw in the prep unit was 50 degrees. TCS foods have to be cold held at 41 degrees or below.

Yukio’s Teriyaki

Comments:

  • Cooked teriyaki chicken was being stored at ambient room temperature after two hours of cooking. The person in charge reheated the TCS food to 165 degrees and hot held it at 135 degrees or above.
  • Cold TCS foods were being improperly held in the 2-door cooler. TCS foods have to be held at 41 degrees or lower.

Comments:

  • Raw, whole shelled eggs were being stored in the walk-in above ready to eat foods. Raw animal products have to be stored below and away from RTE foods.
  • Cooked meats in the walk-in and 2-door freezer were being cooled at greater than 2-inch depths, some covered and some uncovered. TCS foods have to be cooled at 2-inch depths or less, uncovered, until 41 degrees or below.

Comments:

  • The person in charge washed their hands in the 3-compartment sink, which was sticky with hand soap. Handwashing must occur only in the designated handwashing sink.
  • Milk and half & half was being held at 50 degrees. TCS foods have to be held at 41 degrees or below.
  • The in-use sanitizer was above 400 ppm. The solution must be maintained at 200 ppm.

Comments:

  • Improper hot holding of fried chicken, at 127 degrees. The person in charge reheated chicken to 165 degrees and hot held it at or above 135 degrees.
  • The in-use sanitizing chlorine solution concentration was below 10 ppm. It must be maintained at 100 ppm.

Comments:

  • The person in charge was not knowledgeable and not maintaining active managerial control. They were unable to correctly answer cold-holding temperature requirements.
  • Improper food worker cards from invalid sources.
  • Improper cold holding. TCS in cold holding was greater than 41 degrees.
  • Prep unit thermometers were in disrepair, and digital thermometers were not available.
  • Sanitizer test strips were absent.

Comments:

Comments:

  • Improper cold holding of TCS foods in the cookline and walk-in cooler. Cut lettuce was being held at 44 degrees, hard boiled eggs at 47 degrees and coleslaw at 45 degrees. TCS foods have to be cold held at 41 degrees or less.
  • The warewashing machine didn’t provide proper surface temperature for sanitizing and has to be serviced.
