Pretzel spot gets 40 red points. Here are Thurston food inspection scores for Sept. 10

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • The person-in-charge was unable to demonstrate food safety knowledge and did not perform duties to maintain active managerial control.
  • Hot held TCS foods measured below 135 degrees in a hot hold case.
  • Cold held TCS foods in an under counter cold hold unit measured greater than 41 degrees.

Comments:

  • The person-in-charge failed to monitor and recognize the proper temperature control standards for cold holding TCS foods.
  • Access to a soap dispenser was hindered by a the placement of a floor fan. A hand sink was obstructed by a trash can.
  • Various cold held TCS foods measured 48-52 degrees. Cold held TCS foods must be kept at or below 41 degrees.
  • Refrigeration units lacked internal ambient thermometers.

Koibito Japanese Restaurant

Sept. 4: 25 red points; 10 blue points.

Comments:

  • Par cooked chicken was observed cooling at depths greater than 2 inches while covered. Foods must be cooled uncovered at depths of 2 inches or less.
  • Foods were improperly labeled without date markings.
  • An ice machine had black scum buildup. Food contact surfaces must be properly maintained, cleaned and sanitized.

Comments:

  • Hot held chicken measured 130-160 degrees. Hot held TCS foods must be kept at or above 135 degrees.
  • Cold held foods in a prep unit measured 44-45 degrees. Cold held TCS foods must at or below 41 degrees.
  • Food flows, or written procedures, for tamales were not available at the time of inspection.
  • There was evidence of buildup in the ice machine. All food contact surfaces must be maintained and clean.

Comments:

  • Sliced lettuce near a fryer was stored at room temperature without using time as a control.

Comments:

Comments:

  • Raw meat was stored above produce in a reach-in cold hold unit. Raw meat must be stored below and away from produce and other ready-to-eat foods.
  • There was no vomit and diarrhea plan or kit available.
  • Non-food grade bags were used to store rice.

Comments:
