Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

- The person in charge was unable to demonstrate food safety knowledge and maintain active managerial control. There was no certified protection manager certificate available.
- Cooked rice measured 51-55 degrees while in room temperature storage. All TCS foods must kept under temperature control or use time as a control.
- Various cold-held TCS foods were too warm. Cold held TCS food items must be kept at 41 degrees or less.
- Workers used a three-compartment sink for food preparation without submitting a written procedure that ensures cross contamination does not occur.
- Shrimp was observed improperly thawing in a three-compartment sink. Thawing must occur completely submerged under running water or under refrigeration.
- A chlorine sanitizer solution was too strong as prepared.
- There was no in-use sanitizer made in the back of the house. In-use sanitizer must be made before food preparation begins.

Comments:
- Multiple foods in a hot case were too cold. Hot-held TCS foods must be kept at or above 135 degrees.
- Breakfast sandwiches were cooled on site despite that practice not being allowed under their medium-risk permit.
- In-use utensils appeared dirty in a dry container. In-use utensils must be stored in ice below 41 degrees, in hot water above 135 degrees or washed at least every four hours.

Comments:
- Cheese in a metal inset was cooling in a walk-in cold hold at 62 degrees while covered and at a depth greater than 2 inches.
- Lamb shanks prepared the day prior appeared to be stored at a depth greater than 2 inches and measured 59 degrees. TCS foods must be cooled at a depth of 2 inches or less and uncovered until the foods reach 41 degrees.
- Cold-held tomatoes, deli meat and garlic measured 55 degrees. Cold held TCS food items must be kept at 41 degrees or below.
