- 1 lb. ground beef
- 1 onion, chopped
- 1/2 tsp. ground chipotle chile pepper
- 1 (10-oz.) can diced tomatoes & green chilies, such as Ro-Tel
- 1 (8-oz.) can tomato sauce
- 12 oz. penne pasta
- 2 c. shredded sharp Cheddar cheese
Instructions
In large nonstick skillet over medium-high heat, cook beef, onions, and chile pepper until beef is no longer pink, 8 to 10 minutes, stirring often. Add tomatoes and sauce; over medium-low heat, cook until onions are tender, about 10 minutes, stirring often.
Cook pasta according to package directions; drain and return to pot; toss with 1 cup shredded Cheddar cheese. Spread over beef mixture; top with remaining shredded cheese. Cover and cook until cheese melts, about 5 minutes. If desired, garnish with fresh basil leaves.
