Fast + Fresh Asian-Slaw Chicken Bowl Recipe Is a Weeknight Dinner Winner
I love to cook up delicious meals for me and my gang, but sometimes I just don’t have the time. That said, anything I serve still has to taste great and satisfy hungry appetites. That’s why I love this Asian-Chicken Salad Bowl recipe. It’s ready to eat in only 15 minutes. Plus, this meal-in-a-bowl is packed with zingy flavor.
The dressing is the star of this dish. We use toasted sesame oil. With its rich, nutty and slightly smoky quality, it’s a great way to amp up a simple vinaigrette. In keeping with the theme, we whisk in rice vinegar and grated fresh ginger. Then a pinch of sugar adds just the right amount of sweetness. Simply toss in rotisserie chicken and coleslaw mix. Ingredients
- ⅓ cup toasted sesame oil
- 2 Tbs. rice vinegar
- 2 tsp. grated peeled fresh ginger
- ½ tsp. sugar
- ½ tsp. salt
- 1 (14 oz.) can bean sprouts
- 1 (14 oz.) pkg. 3-color coleslaw mix
- 2 cups shredded cooked chicken
- 2 scallions, thinly sliced Pea shoots (optional)
Instructions
In large bowl, whisk together sesame oil, vinegar, ginger, sugar and salt.
Drain bean sprouts. Add sprouts to bowl with sesame dressing along with coleslaw mix, chicken and scallions; toss until combined. Transfer to serving bowl. If not serving immediately, cover and refrigerate. If desired, just before serving garnish with pea shoots.
