Ingredients

  • 1 (16 oz.) pkg. mini peeled carrots
  • ¾ cup pork gravy from a jar
  • ½ cup apple cider
  • 2 lbs. pork tenderloin, trimmed, cut into 1" pieces
  • 1½ tsp. dried sage
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2 Golden Delicious apples, cored, cut into ½"-thick wedges
  • 2¼ cups Bisquick baking mix
  • ¼ cup grated Parmesan cheese
  • ⅔ cup milk
  • 1 Tbs. sliced fresh sage leaves (optional)

Instructions

Heat oven to 400°F. In large microwavesafe bowl, combine carrots and 1⁄4 cup water. Cover; microwave in 1-min. intervals, stirring, until just tender, 4–5 min.; drain. Combine gravy and cider; reserve. Sprinkle pork with dried sage, salt and pepper. Generously coat large ovenproof pot with cooking spray; heat over mediumhigh heat. In batches, add pork and cook, turning, until browned, 2–3 min. per batch. Remove. Add apples to pot; cook, stirring, until slightly softened, 4–5 min. Stir in pork, carrots and gravy mixture.

Mix Bisquick and cheese; stir in milk until dough forms. Divide dough into 10 portions; arrange over pork mixture. Bake until pick inserted into biscuits comes out clean, 25 min. Top with sage.
