Ingredients
- 1 Tbs. butter
- 1 carrot, chopped
- 1 small potato, chopped
- ½ leek, chopped
- 3 cups chicken stock
- 1 cup light beer
- 2 cups grated Cheddar
- ½ cup half-and-half
Instructions
In pot, melt butter over medium heat; add vegetables. Cook until tender, 8–10 min.
Stir in stock and beer; bring to a boil over medium-high heat. Reduce heat to low; stir in cheese and half-and-half. Cook, stirring, until cheese melts. Season to taste with salt and pepper.
