Protein-Rich Farmstand Pasta Recipe is Filled with Fresh Flavor
With so many veggies popping up at my my local farmer’s market, I’ve been inspired to incorporate new dishes into my weekly lunch and dinner rotation. This farmstand pasta recipe is the perfect addition! It features some of my favorite produce picks - tomatoes, cucumber, arugula and fresh herbs - tosses them with cheese in a tangy vinaigrette for incredible flavor, and then combines it all with rotini for a pasta dish that can’t be beat. Besides its deliciousness, this pasta dish is also loaded with protein to keep you satisfied for hours. The secret? High-protein pasta with 17 grams of protein per serving. Just cook up a batch, toss it with all the other ingredients, and you’ve got an amazing lunch or dinner you’ll love. And it’s good for you, too!
This pasta is quick and easy to make and takes just 15 minutes to prep. Chill it for 30 minutes and enjoy for dinner; then eat the leftovers for lunch the next day. Check out our video to see how simple it is.

Ingredients
- 1 lb. Barilla Protein+ Rotini, cooked per package directions
- 2-3 cups raw or roasted diced seasonal veggies, such as cucumber, arugula and red onion
- 1 pint cherry tomatoes, halved
- 1/3 cup pitted olives
- Handful of fresh herbs, chopped
- 1/2 cup olive-oil vinaigrette
- 3/4 cup cubed feta or smoked tofu
Instructions
In large bowl, toss all ingredients except feta/tofu. Season with salt and pepper to taste. Gently mix in feta/tofu. Cover and refrigerate at least 30 minutes.
