Easy Chorizo-Chili Zucchini Cups Recipe Is Filled With Smoky Deliciousness
I’m a big fan of stuffed veggies. From peppers and tomatoes to mushrooms, these tasty gems are a complete meal. You get meat, veg and starch all in one yummy package. That’s what inspired our Chorizo-Chili Zucchini Cups recipe. It’s a twist on the classic comfort food topped with melty Monterey Jack. Chorizo is a type of Spanish sausage. Pork is combined with red pepper, paprika and other spices. Here in the U.S., it usually comes in two varieties - dried and fresh. They both add rich complexity to many dishes. We opted for fresh in our zucchini boats. As it cooks it releases flavorful drippings that give smoky deliciousness to the filling. We combine it with heart-healthy black beans, chili powder and tomato sauce. The stuffing can be made several days ahead-simply cover and refrigerate until ready to use. Ingredients
- 2 links fresh chorizo sausage (about 6 oz.), casings removed
- 1 onion, chopped
- 1 (15.5 oz.) can black beans, rinsed, drained
- 1 (8 oz.) can tomato sauce
- 1 tsp. chili powder
- 4 large zucchini, trimmed, cut crosswise into thirds
- ¾ cup shredded Monterey Jack cheese
Instructions
Heat oven to 375°F. Coat nonstick skillet with cooking spray; heat over medium heat. Add sausage and onion; cook, stirring and breaking up sausage, until browned, 10 min. Add beans, tomato sauce, chili powder and ⅓ cup water. Over medium-low heat, cook, stirring occasionally, until slightly thickened, about 10 min.
Scoop out zucchini flesh, leaving ¼"-thick shell along sides and bottoms. Fill with chorizo mixture; place in 13"x9" baking dish. Cover. Bake until just tender, about 30 min. Uncover. Top with cheese. Bake until cheese is melted, 5 min.
