I must admit, I love a juicy steak. While a sprinkling of salt and pepper is really all it takes to make it delicious, sometimes I crave something a bit more special. That’s what inspired this Rib-Eye Steaks with Chipotle Butter recipe. Ready to eat in just 30 minutes, it’s easy enough for a weeknight dinner, yet special enough for company.

Compound butter is simply softened butter mixed with other ingredients like spices, citrus zest or herbs. This quick-prep condiment can elevate an ordinary cut of meat to a wow-worthy dinner sensation. For a fiery kick, we add chipotles in adobe and garlic to our version. If you prefer a milder spread, omit it then sub in coarsely crushed black peppercorns, or a blend of chopped fresh rosemary and parsley. Ingredients

  • ¼ cup butter, at room temp.
  • 2 tsp. minced chipotle in adobo, or more to taste
  • 1 clove garlic, minced
  • 1 tsp. grated lime zest
  • 4 (1 lb.) bone-in rib-eye steaks, about ¾"-thick

Instructions

In bowl, combine butter, chipotle, garlic and zest; stir until well combined. Reserve. Dividing equally, sprinkle 1 tsp. salt and 1⁄2 tsp. pepper over all sides of steaks.

Coat nonstick skillet with cooking spray and heat over medium-high heat. In batches, cook steaks, flipping once, about 4 min. per side for medium-rare. Transfer to platter; cover to keep warm while cooking remaining steaks. Serve steaks topped with reserved chipotle butter. Chipotle butter can be made several days ahead and stored in covered container in refrigerator.
