Tender, juicy grilled steak salad recipe for your next summer cookout
There’s nothing I like better than to fire up the grill and host a backyard bash. And a juicy steak is my go-to for the star of the show. Seasoned with salt and pepper and cooked to perfect medium-rare it turns out so tender and delicious. But sometimes I like to mix things up. That’s why this Grilled Steak Salad recipe is my new favorite. An east upgrade takes it over the top.
Marinades are an easy way to add bold flavor. The acidic mixture helps break down muscle fibers in meat. We use store-bought salsa mixed with cilantro, olive oil and red wine vinegar. It does double duty as the marinade and dressing for the salad. We combine the greens with creamy avocado, cucumbers ribbons, grape tomatoes and heart-healthy kidney beans. To prep the cukes, simply run a vegetable peeler along the veggie to create thin strips. Give it a try and let us know what you think.

Ingredients
- 1 cup fresh salsa
- 1 tbsp. chopped fresh cilantro
- 3 Tbs. olive oil
- 1 Tbs. red wine vinegar
- 1 lb. boneless beef sirloin steak, ¾” thick
- 2 mini cucumbers
- 8 cups torn lettuce
- 1 avocado, pitted, peeled, chopped
- 1 cup grape tomatoes, halved
- 1 cup cooked kidney beans
Instructions
In blender, combine salsa and cilantro; cover with lid. Process until smooth. Transfer to bowl; whisk in olive oil and vinegar. Place steak and ⅓ cup dressing in large food storage bag; seal. Chill 2 hrs., turning bag several times. Remove steak from bag; discard marinade.
Prepare grill for medium-high direct-heat cooking. Grill steak, flipping once, 4–5 min. per side for medium-rare. Let stand 5 min.; slice. Thinly slice cucumbers lengthwise. Place lettuce, cucumbers, avocado, tomatoes and beans on platter. Top with steak. Serve with remaining dressing.
