Fried chicken is one of my all-time favorite comfort foods. Trouble is, it can be a messy chore to make at home. So, when a craving strikes, I usually head over to the prepared food aisle at my local market. It’s super-convenient, but it gets to be expensive. What’s more, it’s loaded with extra fat and calories. That’s what inspired this Buttermilk Chicken recipe. It cooks up in the air fryer so cleanup is a snap. Best of all, it turns out extra crunchy with a lot less added oil.

Buttermilk is a classic when marinating chicken. That’s because the acid in the liquid helps break down muscle fibers, tenderizes the meat and ensures it turns out full of flavor. Now for a fun twist-we use convenient cornflakes to create the crispy crust. So yummy! Simple for a weeknight, fun for a get-together, or perfect for a picnic in the park. Ingredients

  • 1 cup buttermilk
  • 2 tsp. garlic powder
  • 4 lbs. chicken pieces
  • 3 cups cornflakes, crushed
  • 1/3 cup all-purpose flour
  • 1 tsp. dried oregano

Instructions

In large bowl, mix buttermilk, garlic powder, 1/4 tsp. salt and 1/4 tsp. pepper. Add chicken; toss until coated. Cover; chill at least 2 hrs. or overnight, turning chicken occasionally.

In bowl, mix cornflakes, flour, oregano, 1/4 tsp. salt and 1/4 tsp. pepper. Working with one piece at a time, coat chicken with crumb mixture. Heat air fryer to air-fry at 325°F. Coat air-fryer basket and chicken with cooking spray. In 2 batches, in basket, air-fry until golden and chicken is no longer pink near bone, 25–30 min. per batch.
