Ingredients
- 8 oz. spaghetti
- 2 Tbs. olive oil, preferably extra virgin + additional
- 3 cloves garlic, sliced
- ¼ tsp. crushed red pepper flakes
- 1 lb. tomatoes, diced
- 2 Tbs. drained capers
- ¼ tsp. salt
- 8 oz. fresh mozzarella, at room temp., torn into pieces
- Fresh basil leaves (optional)
Instructions
Cook spaghetti per package directions. Reserve 1⁄4 cup cooking liquid. Drain pasta.
In nonstick skillet, heat 2 Tbs. oil over medium-low. Add garlic; cook until golden, 2-3 min. Add pepper flakes; cook 30 sec. Add tomatoes, capers, salt, pasta and reserved liquid. Over medium heat, cook, stirring, until heated, 2 min. Stir in mozzarella. If desired, top with basil and drizzle with oil.
