Reading inspection scores:

▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Several half-pans of gravies, beans, hollandaise cooled from previous night were at temperatures from 50-54 degrees. Foods must be held at 41 degrees or colder, with food depths two-inches or under. Blue — Two-door merchandiser cooler was at 50 degrees. Cold holding/storage must be 41 degrees or colder. Sanitizer dispenser was not working.

Comments: Red — One employee’s foodhandler card was expired. Blue — Far side of grease hood lighting is out.

Comments: Red — Cook’s area cooler was 46-47 degrees on top and 43-44 degrees on bottom. All cold holding/storage must be 41 degrees or colder. Present cook has a foodhandler card that expired in January.
