Reading inspection scores:
▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
▪ Blue violations relate to the overall cleanliness and condition of the operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Blue — No sanitizer residue was found on wiping cloths. Bartender had unapproved foodhandler card. Sanitizer was too weak in 3-compartment sink.

Oct. 16: Routine check (35 red; 0 blue)
Comments: Red — Cook handling bread and pepper with bare hands while cutting. Cut lettuce and tomato left in bins on counter were 62 degrees.
FARRELLI’S PIZZA & POOL CO.

Oct. 13: Routine check (40 red; 12 blue)
Comments: Red — There were expired foodhandler cards in folder. Hand sink on front food line blocked and not in use. No soap was available on the front line and dirty towels were in sink. Front line cook and bar staff were not observing proper handwashing regulations. Blue — Biscuits and chicken were not labeled, dated or time stamped for cooling. Storage of bacon not properly wrapped, dated or labeled. Ice machine has mold on inside strip. Mold on gasket of walk-in refrigerator.

Oct. 21: Routine check (15 red; 5 blue)
Comments: Red — At least two workers do not have current foodhandler cards posted. Fry cook’s open-top cooler contained foods all above 45 degrees. All cold holding/storage must be 41 degrees or below. Blue — No sanitizer in third sink.
LA QUINTA INN

Oct. 21: Routine check (30 red; 5 blue)
Comments: Red — No foodhandler cards were available for food workers. Cold crock was over-filled and cream cheese was 61 degrees. No paper towels near self-serve area handsink. No thermometer in serving area counter refrigerator. Blue — Cook’s thermometer reads 10 degrees too high.

Oct. 20: Routine check (5 red; 3 blue)
Comments: Red — At least two workers had no foodhandler cards. Blue — Some food debris behind Dumpster.

Oct. 12: Routine check (10 red; 17 blue)
Comments: Red — Back handwash sink blocked with plastic bottles — sink not in use. Blue — Mushrooms in walk-in cooler not covered, with open boxes of products stored on top of each other. Wiping cloths on right side of service line had no sanitizer residual on them. Service line for pizza prep needs to be cleaned and sanitized. Reach-in freezer needs to be defrosted. Door does not close properly.

Comments: Blue — Thermometers were missing from small back-up refrigerator on front line and in walk-in cooler.
INFERNO BRICK OVEN PIZZA
8825 Tallon Lane SE, Lacey
Oct. 12: Routine check (30 red; 5 blue)
Comments: Red — Three workers were found to have expired foodhandler cards. Front handsink leaking. No trash can for handsink. Ice machine needs to be cleaned and sanitized. Debris found on metal lip inside ice machine. Cold deli meat was 45 degrees on service line with container overfilled. Lid was not being closed between uses. Blue — Chemicals stored above foods and need to be moved.
