Reading inspection scores:

▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Dec. 2: Routine check (10 red; 3 blue)

Comments: Red — On cook’s line opposite grill, middle cooler with diced tomato and meats was 51 degrees. All cold holding/storage must be 41 degrees or cooler. Blue — Knife stored in crack between coolers.

Dec. 1: Routine check (15 red; 10 blue)

Comments: Red — cook’s left countertop coolers has foods heaped too high so foods are above the minimum 41 degrees. No cook’s thermometer was located. Blue — Rice scoop with residue in 76 degree water, and cleaned only daily. In office, bag of sugar and box of rice were stored directly on the floor. Some rubber floor mats have dried-on residue.

Comments: Red — Containers of food found cooled improperly. Dolmas, rice, lamb and beef combination cooled at food depths greater than two inches and possible room-temperature cooling. Server observed slicing hot bread and placing in basket with bare hands. Reinspection — A reinspection was performed on Dec. 2, with no violations noted.
