Reading inspection scores:
▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Tall cooler near office was holding all foods between 48-49 degrees. Cold holding/storage must be 41 degrees or colder.
Jimmy’s Restaurant

Jan. 5: Routine check (35 red; 13 blue)
Comments: Red — Large red colander of thawed prawns stored on table, with prawns at a temperature of 69 degrees. There were washed small storage bins stored in handwash sink. Handwash sink must be kept clear at all times. Blue — Wiping cloths had no sanitizer residue on them. Doors and handles of three-door freezer have grime accumulation. Dishwasher does not provide sanitizer in rinse cycle.
Papa Murphy’s
3726 Pacific Ave. SE, Lacey
Jan. 5: Routine check (10 red; 2 blue)
Comments: Red — Several employees had expired foodhandler cards. A thermometer must be provided for pizza prep refrigerator. Blue — A small section of wall at side of walk-in cooler and small work table is damaged and has paint flaking from it.
