Restaurant inspections for Jan. 20

Reading inspection scores:

▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Jan. 7: Routine check (35 red; 10 blue)

Comments: Red — Worker who came on after eating on lunch break did not wash hands before putting on gloves. One employee had no current foodhandler card. In walk-in cooler, hamburger was stored over ready-to-eat lettuce. Blue — Food being stored directly on floor. No test strips were available to test sanitizer strength.

Jan. 5: Routine check (5 red; 7 blue)

Comments: Red — No customer disclaimer regarding undercooked foods on breakfast menu. Blue — No thermometer found in cook’s three-door cooler. No locking door for outside machine to prevent access.

Paul’s Burger & Teriyaki

3959 Martin Way E, Olympia

Jan. 8: Routine check (5 red; 15 blue)

Comments: Red — An employee foodhandler card is expired. Blue — Bag of rice and bag of sugar stored directly on floor. Wiping towels tested had no sanitizer residual on them. Sanitizing solution not prepared for three-compartment dishwashing.

Comments: Red — Several employees had expired foodhandler cards, and one was not accounted for.

Don Garcia Mexican Restaurant

5730 Ruddell Road SE, Lacey

Jan. 13: Routine check (10 red; 8 blue)

Comments: Red — Handwash sink was blocked by work table and large stock pot containing used/old oil. Blue — There was food thawing in bottom of food sink with hot water running over them. Proper thawing is food must be submerged in cold running water.

Jan. 12: Routine check (15 red; 0 blue)

Comments: Red — All food in cooler to the right of cook was between 48-49 degrees. Cold holding/storage must be 41 degrees or colder. Cook’s thermometer needs to be calibrated. It reads 54 degrees at 71 degrees.
