Coffee on the rise: Two Sisters open new spot, other local purveyors expand
Lauren and Valerie Lopez, sisters who wanted to go into business together and spent about a year looking for their location, are set to open Two Sisters Coffee Co. in Tumwater next week.
The business, which officially opens in 800 square feet on March 29, is at 259 Israel Road SE, Lauren told The Olympian.
Two Sisters will sell coffee, both hot and cold, as well as energy drinks, smoothies, lunch items, pastries and coffee flights, a serving of four 8-ounce iced drinks that they expect to rotate monthly, she said.
To kick things off, they are starting with the following flight: Bunny colada lotus (a plant-based energy drink), with gold lotus, coconut, peach and pineapple juice; Lavender fields, a lavender and honey latte; Coconut chai tea, with vanilla chai, coconut and caramel drizzle; and Cherry blossom cold brew, with almond and cherry cold foam.
Lauren, who has experience as a barista, said she enjoys the coffee business because she gets to meet new people and make new connections. She met two of her closest friends in the coffee business, she said.
The shop will be largely a two-woman show for now, although they also are receiving help from a friend, Lauren said.
Two Sisters will operate 7 a.m. to 5 p.m. Mondays through Fridays and 8 a.m. to 3 p.m. Saturdays.
If a customer gets a loyalty card on March 29 — the kind of card a customer uses to work their way toward a free beverage — it will be double punched with the purchase of one drink, Lauren said.

Other business happenings
Dutch Bros in Lacey is exploring a larger location, according to city information. The business proposes to remove an existing drive-through coffee shop and build a bigger one at 8229 Martin Way E.
Ebony and Ivory Coffee, which got its start in Lacey’s Midtown in early 2021 and later expanded to Federal Way in July 2022, will expand into Tacoma later this year, said co-owner Kennon Maurer, who runs the business with his wife, Makenzie.
The Tacoma location will open downtown at 1145 Broadway, he said. That location also will function as a wine bar.
Any expansion plans in Thurston County?
They plan to, Kennon said, but he didn’t have the details just yet.

The certification, bestowed by nonprofit B Lab, shows that a business is meeting high standards of verified performance, accountability, and transparency on factors from employee benefits and charitable giving to supply chain practices and input materials.
“Companies submit documents containing their business model and operations practices, undergoing an extensive review of their employees, customers, and sustainability practices,” the release reads.
“I take great pride in the work our team has done over the years towards a better way to do business,” said David Wasson, president and chief executive, in a statement. “Becoming a certified B Corp. shows our continued commitment to our employees, customers, and the environment.”
Dancing Goats Coffee was known as Batdorf & Bronson until the company decided to change its name.
