Reading inspection scores:

▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Food worker cards unavailable upon request, not on site. Correction: Make available upon request. Improper hand washing. Employee did not wash hands after financial transaction before food prep. Correction: Properly wash hands for 20 seconds at an approved and properly stocked hand sink with soap and disposable towels in 100-120 F water. (CDI - wash.) Inadequate hand washing facilities. Basin unavailable for hand washing. Syrup containers in basin. Correction: Use hand sink for hand washing only. (Splash guards to be installed by March 26.) Improper cold holding temperatures. Quiche in Atoza unit 55 F. Correction: Ensure food in cold holding is maintained at or below 41 F. If transporting/pick-up, ensure transport in temperature control. Shelving to be 6 inches or greater from floor. Re-inspection required within two weeks for red high-risk violations exceeding 45 points, $220 re-inspection fee.
