Reading inspection scores:
▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Sani-bucket at 200 ppm quat. Warewash at 50 ppm chlorine. Milk, watermelon and salsa at 44, 49, and 44 F in top and bottom of front prep cooler. Potentially hazardous foods must be held at 41 F and below. Corrected: All foods moved to walk-in cooler. PIC took cooler temps at 8 a.m. this morning and foods were 42 F. Work order already placed this morning. Raw shell eggs stored over ready-to-eat hash browns in cook line cooler, raw shell eggs stored over ready-to-eat dill pickle chips in walk-in. Raw animal proteins must be stored below and away from ready-to-eat foods. Corrected: Eggs moved. Waffle maker is observably better maintained since last inspection. Batter fridge cleaning frequency has increased and looks great, big improvement noted. Cook line cleanliness and overall facility cleanliness has improved greatly. Chipped and missing tiles in mop sink are scheduled to be repaired within the next six months. Back beverage area shows improvement as well. Discussed March 18 complaint and suspected food borne illness. No risk factors matching symptoms were observed during inspection. Corporate and local facility aware of complaint, staff informed. Consumer advisory still in place on menu for undercooked items. Bathroom soap dispensers both functional and tables observed clean and dry.

Comments: Case with corned beef, all beef 44-46 F. Correction: Adjust colder, air dropped to 42 F in 10 minutes, continue to monitor; 41 F is maximum allowed.
