Flaming Pig BBQ aims to open in early February, owner says
For the past year, Flaming Pig BBQ has operated out of a food truck in Tumwater, largely serving state workers in the area. But come early February, owners Mike and Sadie Hill plan to make it permanent.
They are putting the finishing touches on space in the Old Towne Plaza, a collection of retailers at Tumwater Boulevard Southeast and Capitol Boulevard. Old Towne Plaza also is home to Meconi’s.
“I have a passion for cooking,” said Mike Hill. His father used to run a steakhouse in Bakersfield, California, and Mike later discovered cooking barbecue as a hobby. He cooked for family and friends and they encouraged him to go into business.
Popular items on the food truck menu: brisket, pulled pork, smokey mac and cheese, and a sandwich called a Pig Kahuna.
The Pig Kahuna is served on a hoagie roll and contains the following: pulled pork, smokey mac and cheese, baked beans, Portuguese sausage, nacho cheese, cole slaw and homemade barbecue sauce.
Wow.
Once the doors open at Flaming Pig, the business will operate 11 a.m. until sold out Tuesdays through Fridays, he said. And once the employees have settled in, they plan to operate both the new location and food truck, Hill said.
