Restaurant inspections for April 1
Note: Thurston County Public Health paused routine restaurant inspections March 12 and has been visiting local restaurants to discuss new operating rules under Gov. Jay Inslee’s recent actions halting dine-in food service, according to Sammy Berg, a senior environmental health specialist for the county.
Inspectors have been visiting local grocery and convenience stores to guide them on social distancing practices, hand-washing, and other COVID-19-related guidance, Berg says. The county plans to restart routine inspections next week while continuing to reinforce new rules and offer guidance to keep staff and customers safe.
Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment, at the Thurston County Environmental Health Office and their website at co.thurston.wa.us/health/ehfood. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: Half and Half (self-serve) was 50 degrees F, 41 degrees F is maximum. Corrected: ice added. will add “ice tube.” Pastry pieces on plate on counter with no cover. You must place bakery dome, etc., over plate and provide small tongs for customers to self-serve. Purchase, two weeks. Note: Switching to quat, 200-300 ppm, range OK.

Comments: Hot pepper mix, 130 degrees F (OK, just placed, 140+ degrees F inside). Barely a trickle from espresso sink. Repair or fill. Keep area in front of sink clear so barista can get hands to sink. Call when work is completed. Ice scoop container not clean. Clean, then clean daily. Note: Duplicate the “breakfast” egg disclaimer onto the breakfast combo sign next to it. Note: Call me back when above all corrected, by March 20, 2020.

Comments: There have been changes in the serving line in the last year or two. To meet current code you must: Move existing two glass sneeze guards toward customers 4-6 inches; place cookies, crackers, etc., under a sneeze guard; and add second 10-inch glass panel in front of hot line. You must call by March 20, 2020.
