Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment, at the Thurston County Environmental Health Office and their website at co.thurston.wa.us/health/ehfood. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: Hand-wash sink had no paper towels. Must be supplied at all times. Corrected. Sauerkraut with pastrami in two-door reach-in at 49-52 degrees F. Must be cold held at 41 degrees F or less.

Comments: The holes in the restroom wall from previously mounted equipment must be filled and sealed with a durable material within two weeks. Two employees with expired FW cards. Obtain renewed FW cards within two weeks.
Olympia Food Co-op

Comments: Holes in frp next to hand sink. Seal or fill these with durable sealant. Prepared tubs of chicken meals at 52 degrees F in salad bar. Must be 41 degrees F or less. Corrective action: Moved. Pan of cooked tempeh cooling in two-door merchandiser at 4 inches deep. Must cool foods at 2 inches deep food depth and in proper refrigeration. Corrected: Divided into two pans. Merchandiser shall only be used for unopened, packaged, commercially made foods.
AFC Sushi at Safeway

Comments: Improper cold holding at PHF/TCS. Sushi in grab-and-go display case 43 degrees F. Correction: Ensure PHF/TCS in cold holding at or below 41 degrees F. CDI-rapid chill in reach-in. Thermometer not used to evaluate PHF/TCS after rapid chill, before placing in service. Correction: Use thermometer to evaluate internal food temps. New employee unable to use risk control/procedure/equipment for calibration. Correction: Train on procedure/obtain training. Sanitizer not made at time of inspection. Correction: Prepare and maintain as required.

Comments: Improper cold holding of PHF/TCS. Milk in under-counter unit 46-47 degrees F. Correction: Maintain PHF/TCS in cold holding at or below 41 degrees F. CDI - temporarily use reach-in until unit repaired to properly function. Thermometer (thin tip) absent in facility. Correction: Provide and use to evaluate foods. Facility absent rinse sink, to be handled in two weeks. Provide additional blender tops and wash/rinse/sanitize/air dry. Provide immediately, within 24 hours. Post note: Removed wheels on under-counter unit, unable to access temperature control. Suggested/required there additional blender tops, only one onsite.
