Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: Some items in the upper preparatory cold hold were 60 degrees rather than at or below 41 degrees. The menu lacked consumer advisories for foods that can be ordered undercooked. Potatoes were found stored on the ground in a carboard box rather than at least six inches off the floor.

Comments: Staff had multiple expired food worker cards. Such cards are required to handle food. Recently sliced tomatoes were found at 44 degrees rather than below 41 degrees.

Comments: Three warewashing sinks were clogged and not properly draining. The toilet facility lacked a sanitary napkin, disposal vessel.

Comments: The inspector found chopped salad stored below chicken. Salad must be away from raw animal foods. In a repeat violation, cooked chicken was found cooling in 3-inch pans rather than 2-inch pans. Repeated violations necessitate reinspection.

Comments: The ice machine was dirty with a mold like substance near the chute. Some items were found stored on the floor rather than 6 inches off the floor as required.

Comments: Birria in a plastic container was cooled improperly. The menu failed to mark raw or undercooked items.

Comments: Chicken and beef were found held in an open air cold hold at 45 degrees rather than at or below 41 degrees.

Comments: A worker had an expired food worker card. Two pans of pork were improperly cooled. Some salad portions were improperly stored at 43 degrees rather than at or below 41 degrees.
