A new restaurant opens in downtown Olympia and Tumwater gets another major housing pitch

A new restaurant has opened in downtown Olympia called Cove, which can be found at 311 Capitol Way N.

The business opened this month, said Justin Hjelm, one of three partners running the new venture. The other partners are Cody Mills and Jason Gilbertson.

The space used to be home to Rhythm & Rye, a bar and live music venue.

Hjelm, who owns the building, entertained the idea of finding a new tenant for the spot, but even that process takes time and money, he said.

“If we’re going to take it that far, we might as well do something of our own,” he said.

And so they did. The restaurant serves what Hjelm calls “easy-eating seafood,” plus sandwiches, salads, soup, appetizers (small plates), craft cocktails and draft beers. The business also has future plans to host live music, he said.

It’s Hjelm’s first time to run a restaurant.

“It’s different, exciting,” he said, adding that he was grateful to have a general manager familiar with the industry. The business employs about 20 people.

Cove is open 3-10 p.m. Mondays; 11:30 a.m.-midnight Wednesdays, Thursdays and Fridays; 9:30 a.m.-midnight Saturdays; 9:30 a.m.-10 p.m. Sundays. The business is closed Tuesdays.

Other business happenings

The city of Tumwater, which is already home to a proposal to build more than 1,000 apartments, will consider a pitch that aims to develop a mixed-use project with more than 600 apartments at 1589 Old Israel Road SW.

According to city information, The Belmont Flats proposal also will have 10 live/work units and 27,500 square feet of commercial space.

Washington State Employees Credit Union has submitted plans to Thurston County to build a new branch with a four-lane covered drive through in Lacey’s urban growth area at 7303 Martin Way E.

The owners of The Shiplap Quilt Shop and Coffee House in Tenino, who also run a similar location in Yelm, are expected to open a third site in November off Yelm Highway in Lacey, according to their website and Facebook.
