Tumwater Denny’s hit with 55 red points in Thurston food safety scores for Nov. 19

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • The person in charge failed to instruct and monitor hygiene and sanitation requirements of handwashing.
  • An employee failed to wash their hands after handling raw eggs and before changing gloves.
  • No contact sanitizer was prepared and in use at the time of inspection.
  • A prep fridge was operating at 56 degrees. All TCS foods must be stored in a unit operating at 41 degrees or below.

Nov. 13: 40 red points; 0 blue points.

Comments:

  • A staff member had an expired Food Worker Card. All food workers must have a valid FWC.
  • Tofu and shrimp were observed cooling on a prep table in quantities of more than 2 inches at 80 degrees. All cooling must be done using a 2-inch shallow pan in a walk-in or by using a pre-approved cooling method submitted to the Thurston County Public Health and Social Services.
  • Chemical spray was observed being stored in an area adjacent to dry food and equipment in the kitchen. All chemicals must be properly separated from food, equipment and single-use items.

Comments:

  • TCS foods were being improperly hot held during inspection. PIC reheated food items must be at 165 degrees or above and hot held at 135 degrees or above. All TCS foods must be held at 135 degrees or above as well.
  • The in-use chlorine sanitizer solution concentration was measured at below 50ppm. The solution must be at 100ppm.

Comments:

  • A food worker made contact with a cone for ice cream with their bare hands. Bare-hand contact is not permitted while working with ready to eat foods unless following an approved plan.

Nov. 7: 15 red points; 5 blue points.

Comments:

  • Multiple Food Worker Cards were expired. All employees must have current, valid FWCs on site.
  • The handwash sink basin was full, with no cold water. All hand wash sinks must have empty basins and must be stocked with soap, paper towels and warm water.
  • The in-use quat sanitizer measured 0ppm. The in-use quat sanitizer solution must be kept between 200ppm and 400ppm.

Comments:

  • Two Food Worker Cards were expired at the time of inspection. All employees must have valid, up-to-date Food Worker Cards.
  • A box of raw beef was being stored on the freezer floor. Food items must be stored 6 inches above the floor.
  • The in-use quat sanitizer solution concentration measured below 200ppm. Quat solution concentrations must be between 200ppm and 400ppm.
  • Quat test strips were also not available during inspection.

Comments:

  • TCS foods were observed in the prepline and the reach-in cooler had evidence of temperature abuse. The foods were moved to the walk-in cooler to get the temperature down to 41 degrees or lower, which is the required temperature.
  • The in-use chlorine sanitizer solution concentration measured less than 100ppm.

Comments:

  • The food establishment did not have a vomit and diarrhea plan with its kit. All food establishments must have a written plan for cleaning and disinfecting vomit and diarrhea.
  • The ware washing machine was not dispensing chlorine at the time of inspection. All sanitizing solutions must dispense to 100ppm.

Comments:

  • No Certified Food Protection Manager was on site, which was a repeat violation from April 1. All food establishments, not including those exempt, must have a CFPM.
