Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:
- No person in charge was present at the time of inspection, nor was active managerial control observed. All food establishments must have a PIC present and available.
- No Food Worker Cards were available upon request. All food establishments must have FWCs available, and the restaurant was directed to provide them by Jan. 5.
- No handwashing was observed after multiple workers changed tasks. Employees and workers must wash their hands following the changing of tasks.
- Pasta noodles were observed covered in the walk-in at 61 degrees. All foods must remain uncovered during the cooling process until they measure 41 degrees.
- A cutting board was seen with severe discoloration and deep cuts, making it uncleanable. All food contact surfaces must be properly maintained.
- The establishment’s sanitizer was expired and could not be measured.
Indian Summer Golf & Country Club/ Embers

Comments:
- A food worker contacted ready to eat food with their bare hands, which is not allowed unless the establishment has an approved plan. The food was discarded.
- A strainer with ice and garnish was placed in the bar handsink. Handwash sinks can not be blocked with items that discourage handwashing.
- Dairy items in the under counter unit were between 48 degrees and 50 degrees. TCS items must be held at 41 degrees or below.

Comments:
- Soups were being improperly cooled, at 123 degrees and 127 degrees. TCS foods must be hot held at 135 degrees or above.
- TCS foods in the walk-in cooler were not datemarked.
- The wall along the rinse compartment sink had evidence of black mold buildup.

Comments:
- One Food Worker Card was expired. One must be obtained within 14 days.
- The handwashing sink was blocked with plastic containers. The handwashing sink must be accessible and free from objects.
- Raw chicken was observed being stored over raw shrimp and raw pork, which is against the hierarchy of storage for TCS foods.
- Some TCS foods were not datemarked.
- The in-use chlorine sanitizer solution measured less than 50 PPM. The person in charge remade the solution and measured it approximately around 100 PPM.

Comments:
- The PIC demonstrated repeat violations of not ensuring cold hold equipment was working properly. TCS foods must be able to be kept below 41 degrees when cold held.
- Tongs were seen being stored on a contaminated surface of raw beef storage. In-use utensils must be kept in a dry-use container and/or held below 41 degrees or above 135 degrees.
- Multiple TCS foods were seen in a prep unit at 45 degrees. All TCS foods must be at 41 degrees or below.

Comments:
- Eggs and raw meats were stored above and adjacent to RTE foods. All raw foods must be stored properly, out and away from RTE foods.
- The food establishment is not approved for cooking and cooling of TCS foods. It was directed to cease cooling processes until a plan is submitted and approved.

- Tomatoes were observed being cold held at 48 degrees. All TCS foods must remain at 41 degrees or below if being cold held. The PIC was directed to send temperature logs to the county for TCS items for two weeks.

- The PIC demonstrated active managerial control and knowledge, however there were repeat violations observed during the inspection. And a food protection certification had not been obtained.
