Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • The restaurant had multiple repeat red violations and no Certified Food Protection Manager (CFPM) on site during inspection. All facilities must have a Person In Charge (PIC) that demonstrates Active Managerial Control (AMC)
  • Food worker cards were missing or expired. All food workers must have a valid Washington State FWC on site at all times.
  • Rice and egg rolls were cooling in amounts greater than 2 inches, and covered. TCS foods must be cooled in 2-inch amounts and uncovered until 41 degrees or below.
  • Bean sprouts were being cold held on ice at 50 degrees. Cold held TCS foods must be kept at 41 degrees or below.
  • The ware washer was not properly hooked up.

March 24: 40 red points; 0 blue points.

Comments:

  • Whole shell raw eggs were being stored above RTE foods. They must be stored below RTE foods to avoid contamination.
  • Temperature controlled foods were being improperly cooled in the prep unit.
  • The MFU was written up for not complying with permit conditions. It was using the MFU for produce preparation improperly and not maintaining a commissary log, as well as storing items improperly.

Comments:

  • The facility had repeat red violations, and PIC duties were not being met.
  • One food worker card was expired.
  • The handwash sinks did not have warm water.
  • TCS foods were being held in a cold unit at between 41 degrees and 50 degrees. TCS foods must be cold held at 41 degrees or below.

Comments:

  • Several foods were observed being improperly cooled. Some items were being cooled at depths above 2 inches, and most were being cooled while covered. This was a repeat violation, and staff were instructed to be retrained on proper cooling procedures.
  • No test strips were available to verify the chlorine concentration of the sanitizer for ware-washing or the in-use sanitizer.

Comments:

  • No thermometer was available on the grill/prep line to evaluate final cooling temperatures. An accurate thermometer is required at all times.
  • The establishment did not have a procedure for vomit and diarrhea clean up. Staff must be trained in proper cleaning procedures and a cleanup plan must be available for review by the health department.
  • The lining of the floor mop sink was in disrepair, which could lead to contamination. It must be repaired by the next routine inspection.

Comments:

  • Raw whole shell eggs were being stored above RTE dairy products. Raw animal products must be stored below and away from RTE foods.
  • TCS products in a single-door cold hold were at 47 degrees. TCS cold held foods must be kept at 41 degrees or below.

Comments:

  • TCS foods were being improperly cold held and were above 41 degrees.
  • The establishment lacked proper consumer advisories on its menus. The breakfast menu was missing a disclaimer for animal protein that can be cooked to order.
  • The restrooms were not properly maintained or constructed. The door does not self close or latch properly. Restroom doors must self close or latch.

Comments:

Comments:

  • Hash browns were in a reach-in refrigerator at 67 degrees when they should have been cooled overnight. A container of waffle batter was also measured at 69 degrees and must be held at 41 degrees or below.

Comments:
