Olympia butcher that also offered lunch service has closed business, owner says

Delmonico’s Heritage Butcher Shop, a destination for fine meats, sandwiches and wine has closed, according to a check of the property on Fourth Avenue East on Monday.

Owner Brian McDonald confirmed the closure. He thanked his customers and explained what’s next for him in a prepared statement.

“Over the last six-and-a-half years, Delmonico’s has been an incredible experience for us and for the community that we served six days a week from Nov. 19, 2019, until May 17, 2026,” he wrote.

“I’d like every single customer of our artisan butcher shop, wine shop and sandwich shop to know what a pleasure it’s been to serve the best ingredients,” he said. “We took immense pride in authenticity of experience, transparency of sourcing and most of all in customer education and support.”

“As a culinary professional, I’m now embarking on a creative journey through working travel and cultural immersion outside the U.S.,” he wrote. “I am devoting a portion of my time for this next phase of my development to explore how to grow and sustain boutique food shops here in America.

“My number one goal will always be to educate and inspire customers to increase their shopping and dining enjoyment,” he wrote. “We hope to see you again – at Delmonico’s, or perhaps a shop with a different name – but that’s all to be determined.”

The business opened at 916 Fourth Ave., Suite 103, and at one time had 11 employees, he said.

The Olympian first wrote about the business in 2022.

The business bought mostly from area farms and the meat was delivered fresh, not frozen, then broken down by hand into a variety of cuts of beef, lamb, pork and chicken, McDonald said at the time. The business also made its own sausage, smoked meats and other items.

It also grew to offer dinner service, according to The Olympian report.

When The Olympian visited the site on Monday, three other people were there, including Teri Haglund, a property manager for Urban Olympia – the business that owns the building – and Debbie Draper, a commercial real estate broker with Coldwell Banker Commercial.

Both said the space is now available.

It measures about 1,300 square feet, plus it has a commercial range hood, a restroom and a walk-in cooler, Draper said.
