Food truck racks up 123 points. Thurston County food safety scores for June 23

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.

If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.

Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Mobile Food Unit

June 15: 115 red points; 8 blue points.

Comments:

  • The Mobile Food Unit was not compliant with its permit. It was cooking raw proteins and cooling them inside the truck, and produce was on the truck with a two-compartment sink full of dishes. According to the inspection, the facility lost its commissary exemptions and had to regain approval by Thurston County Public Health.
  • The person in charge was still working on obtaining CFPM certification. They lacked knowledge of permit conditions and how to fix high-risk violations.
  • The person in charge used their bare hands to grab noodles. Gloves or tongs must be used to grab them.
  • Whole mangoes were unwashed and ready for service in the prep unit. All produce must be rinsed before it is prepared.
  • Raw meats of different types were being held in the same container in the freezer. Species must be separated.
  • Rice was observed in greater than 2-inch depths and in bags in the freezer. Shrimp was also cooked and then cooled in a plastic bag observed in the prep unit at 98 degrees.
  • Noodles were observed on the grill at 97 degrees. All items being hot held must reach at least 135 degrees.
  • Bean sprouts were in the prep unit at 70 degrees. All TCS items being cold held and requiring temperature control must be kept below 41 degrees at all times.
  • In-use utensils were being stored in room temperature water, which is not permitted. They must be stored in ice or hot water, and it must be changed every four hours.
  • The three-compartment ware washing sink was not being properly maintained. There was also no sanitizer in the in-use sanitizer buckets.

June 11: 60 red points; 16 blue points.

Comments:

  • The person in charge was not performing duties to maintain active managerial control. A person in charge had not been designated or trained, which was a repeat violation.
  • Food Worker Cards were expired, and a Certified Food Protection Manager card was unavailable during the inspection.
  • TCS foods including rice noodles, chicken and tofu were being improperly cooled in quantities greater than two inches and covered.
  • TCS foods were being improperly cold held at temperatures above 41 degrees.
  • The establishment had handwashing facilities that weren’t stocked.
  • Thermometers were not being used to verify temperatures.
  • Food was being thawed improperly in basins of warm water.
  • There was potential contamination during food preparation. There was no separation of species during thawing, and vegetables were being rinsed in a sink meant for dirty dishes.
  • There were utensils in standing water. They must be stored dry or below 41 degrees or above 135 degrees.
  • There was improper plumbing, with leaking faucets and two sinks without cold water.

Comments:

  • TCS foods in the merchandiser including milk, hot dogs, turkey and eggs measured at 47 degrees. TCS foods in cold hold must be 41 degrees or below.
  • The handwash sink in the employee restroom had insufficient water flow, and there was no soap or paper towels available. All handwash sinks must be properly equipped with warm water that flows well, and hand soap and paper towels.
