Reading inspection scores:

▪ Pay attention to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Cheese sauce not stored at proper temperature. Sliced jalapenos in open container in a refrigerator not designed for open containers. No bleach or QAC test strips at stand.

Comments: No thermometer in homestyle refrigerator.

Comments: Frozen meats thawing in sink without running cold water. Correction: Move to refrigerator. Partition or barrier at prep table and refrigerator to prevent potential public contamination and access not yet completed. Must be completed in 60 days.

Comments: Containers of contact sanitizer at 0 to 10 ppm chlorine. Must be maintained at 50 ppm.

520 Cleveland Ave. SE, Tumwater

Dec. 6: 5 red; 5 blue

Comments: No-contact infrared thermometer used for blast chill measuring and recording. Probe thermometer still in package. Infrared is surface only and not considered accurate enough. Sterilux hose terminates inside of food wash sink. Correct within two weeks.

Narai Asian Cuisine

320 Fourth Ave. E, Olympia

Dec. 5: 60 red; 3 blue

Comments: Shredded cabbage on counter is 52 degrees when maximum allowed is 41 degrees. Correction: Refrigerate. Mung beans noodles soaking on counter in 54-degree water when maximum is 41 degrees. Correction: Put in cooler to soak. Dishwashing sink has the hot water turned off. Sink nearest wait staff area is marked “no hand wash.” Men’s restroom door is not self-closing. Since red points exceed 45, a re-inspection is required by Dec. 19.
