Here are Thurston County food inspection scores for Jan. 22

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • Fresh garlic in butter at room temperature measured 77-88 degrees. This TCS must be stored under time or temperature control for safety.
  • The establishment prepared a vacuum sealed ham without an approved plan.
  • A chlorine sanitizer solution was not properly prepared.

Comments:

  • Boba in a warmer measured 111-112 degrees. Hot held TCS foods must be at or above 135 degrees.
  • Boba in a plastic container was stored at room temperature. The person in charge reported using proper procedures, including time marking the boba. However, these procedures were not written down as required.

Casa Mia

4426 Martin Way SE, Olympia

Jan. 15: 35 red points; 0 blue points.

Comments:

  • Cooked pasta measured 48-50 degrees in a walk-in cold hold. The pasta was cooled with cold water and covered at depths greater than 2 inches. TCS foods must be cooled uncovered at a depth of 2 inches or less until the food reaches 41 degrees or below.
  • Cut lettuce on the top of a prep unit with mozzarella on ice measured greater than 41 degrees. Cold held TCS foods must be at or below 41 degrees.

Jan. 17: 25 red points; 0 blue points.

Comments:

  • An employee did not wash their hands after returning to the kitchen from a restroom. The employee said they washed their hands in the restroom. Hand-washing must occur when returning from a break or restroom to ensure no contamination occurs.

Comments:

  • The handwash sink was blocked by a step ladder and a sanitizer bucket, and it lacked paper towels.
  • Milk in a cold hold unit measured 41-47 degrees. Cold held TCS foods must be at or below 41 degrees.
  • No test strips for a chlorine sanitizer solution.

Jan. 16: 20 red points; 5 blue points.

Comments:

  • Premade sandwiches were in a small cold hold unit with a 47 degrees ambient temperature. Cold held TCS foods must be at or below 41 degrees.
  • A drain line from a three-compartment sink below an ice machine must be adjusted to meet a condition of their permit.
  • A sanitizer solution at a three-compartment sink did not dispense properly.

Comments:

  • One food worker card was expired.
  • Cold held sandwiches in a reach-in cooler had evidence of abused temperature between 43-45 degrees. Cold held TCS foods must be at or below 41 degrees.

Comments:

  • The establishment cooled chicken despite that activity not being allowed under a medium risk permit.
  • An in-use chlorine sanitizer was not properly prepared.
