Here are Thurston County food safety inspection reports for March 19

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county may shut down the establishment. The establishment may reopen after the person-in-charge develops a written course of action to correct all violations and demonstrates corrective action during a pre-opening inspection. Closures also may occur if there is an imminent health hazard, regardless of the total inspection points. The length of a closure may vary depending on the violation and timeframe for corrective actions.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • Shellfish tags were not dated. All shellfish tags must be marked with the date that the first and last product was used.
  • A soup was observed cooling at a depth greater than 2 inches. TCS foods must be cooled uncovered in 2-inch-deep amounts or less until the foods measure 41 degrees or below.
  • A consumer advisory does not include an asterisk next to menu items that are served undercooked.

Casa Mia

716 Plum St. SE, Olympia

March 10: 25 red points; 8 blue points.

Comments:

  • Food worker cards unavailable upon request.
  • Food items and wares were within a splash zone of a hand sink.
  • Sliced tomatoes in a cold hold prep unit measured 48 degrees. Cold held TCS foods must be at or below 41 degrees.
  • An ice machine had a mold-like substance. A meat slicer and can opener appeared dirty with visible food debris. Food contact surfaces must be properly cleaned.
  • A women’s restroom lacked a receptacle.

Comments:

  • Raw meat that was being prepped was left unattended at room temperature. Raw animal products must be cold held at or below 41 degrees.
  • An in-use sanitizer bucket was too weak as prepared.

Grocery Stores and Confectioneries

March 12: 5 red points; 0 blue points.

Comments:

  • Raw shelled eggs were observed stored on a top shelf above ready to eat foods.

Pacific Mini Mart

March 10: 15 red points; 5 blue points.

Comments:

  • The person-in-charge was not maintaining active managerial control and was unable to demonstrate knowledge about hot- and cold-holding requirements for TCS foods.
  • Whole shell raw eggs were stored above ready-to-eat foods.
  • Cold held TCS foods, chicken patties in a refrigerator and milk in a beer cooler measured greater than 41 degrees.
  • Milk, non-TCS foods were stored on the floor rather than on shelving.

McDonald’s

Comments:

  • Water from a restroom hand sink did not reach 100 degrees after more than one minute.
  • A sanitizer solution was too weak.

Comments:

  • Sliced tomatoes, diced tomatoes and other various foods measured 56-59 degrees in a prep unit. All TCS foods must be cold held at or below 41 degrees.

Comments:

  • Food debris was visible on a vegetable slicer and meat slicer. Food contact surfaces must be properly cleaned.
