Reading inspection scores:
▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Improper hand washing. Employee put on gloves without washing hands. Hand sink not accessible. Improper cooling methods were observed. Blue — Sanitizer not made at time of inspection and test strips were unavailable. Reinspection — A reinspection was done Feb. 10, at which time there were 50 red violations and 5 blue violations noted. Another reinspection was done Feb. 24, at which time there were 25 red violations and 5 blue violations noted.

Comments: Red — Improper hand washing and glove use observed. Employee changed tasks without changing gloves or washing hands. Blue — Ice machine dirty with mold-like growth. Shelves in walk-in cooler dirty with debris.

Comments: Red — Improper cooling was observed. Rice from two days prior was greater than 2 inches in depth and was 42 degrees in the walk-in cooler. Blue — In-use utensils stored in standing water at 60 degrees.
