Reading inspection scores:

▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Cut strawberries, kiwi and blueberries were between 58-62 degrees. Fruit must be held at 41 degrees or below.

Comments: Red — Inadequate refrigeration.

New Market Deli

7299 New Market St. SW, Tumwater

March 8: Routine check (10 red; 5 blue)

Comments: Red — Use of vacuum-insulated salad bowl is not appropriate. Cold from ice cannot penetrate to contents of bowl. Blue — Dishwasher is not reaching proper rinse temperature.

Comments: Blue — Sanitizer not prepared in front food prep area. Physical facilities not properly maintained.

March 10: Routine check (30 red; 10 blue)

Comments: Red — Person who was cracking raw eggs went directly to serving ready-to-eat hamburgers without washing hands before putting on gloves. Raw, bloody beef stored directly above ready-to-eat foods. Blue — Bar dishwasher did not have proper strength sanitizer in rinse cycle. No test strips were available for testing sanitizer solution. Food contact surfaces not cleaned. Pots double-stacked in dishwasher, making bottom pan uncleanable.

March 11: Routine check (10 red; 5 blue)

Comments: Red — Dairy mix in top of soft serve ice cream dispenser was at 51-55 degrees. Cold serve/hold/storage must be 41 degrees or colder. Blue — Chlorine sanitizer supply for dishwasher was empty.

2505 Fourth Ave. W, Olympia

March 18: Routine check (40 red; 5 blue)

Comments: Red — Employee boxed ready-to-eat sandwich with bare hands. Front hand-wash sink was not accessible. Turkey, ham and cut lettuce were held at 45 degrees. Cold holding/storage must hold at 41 degrees or colder. Blue — Cutting board needs to be replaced as it is no longer easily cleanable.

Charlie’s Grilled Subs

Capital Mall, Olympia

March 18: Routine check (30 red; 3 blue)

Comments: Red — Foodhandler cards were expired. No hand washing was observed until after inspection started. Blue — Ice scoops need to be used for customer ice cups. Disposable cups are not to be used for dispensing ice and ice scoops need to be stored properly.
