Reading inspection scores:

▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Salad bar food items were held at 47-49 degrees. Cold holding/storage must maintain temperature of 41 degrees or colder.

Trapper Sushi

March 30: Routine check (45 red; 0 blue)

Comments: Red — Inadequate hand-washing facilities. The sink near sushi prep station was inaccessible. Foods were cooling in walk-in refrigerator covered. Foods must be uncovered while cooling. Improper cold holding temperatures observed. Sushi fish was held between 52-65 degrees.

Panda Express

Capital Mall, Olympia

March 29: Routine check (25 red; 0 blue)

Comments: Red — Three chicken dishes were in hot holding at 101-121 degrees. Hot holding must maintain a temperature of 135 or above.

Panera Bread

2525 Capital Mall Drive SW, Olympia

March 29: Routine check (5 red; 0 blue)

Comments: Red — Many employees have expired food-handler cards.

Mayan Family Restaurant

2120 Marvin Road NE, Lacey

March 28: Routine check (40 red; 10 blue)

Comments: Red — Employee cracked whole shell raw eggs then touched ready-to-eat precooked chili relleno without changing gloves or washing hands. Hand-washing facility at bar was absent paper towels. Beverage area hand sink was inaccessible. Raw whole eggs stored on top shelf of walk-in above ready-to-eat cheese dip. Blue — Raw hamburger thawed at room temperature on food prep sink. Sanitizer not prepared/provided in food prep areas, and was absent in beverage stations. Bar gun holsters dirty with mold-like substance.

Pizza Hut/Wingstreet

6020 Pacific Ave. SE, Lacey

March 21: Routine check (5 red; 15 blue)

Comments: Red — Food-handler card not available for all employees. Blue — Sanitizer dispenser not working properly. Utensils used in conjunction with pizza peel stored dirty. Faucet handle at three-compartment sink is missing.
