Reading inspection scores:

▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Person in charge did not know the correct concentration of sanitizer for solution in rinse sink. Employee did not wash hands prior to shift start and cooking. Use of bare hands noted when making waffle cone and after removing from plastic cone shaping tool. Employee did not use gloves while handling ready-to-eat foods. Hand-wash station was blocked and could not be used. Bananas found not covered and not stored properly. No sanitizer found on station or being used. Blue — Lids on soft serve machine dusty. Reinspection — A reinspection was performed on March 29, where there were 25 red violations noted.

Comments: Red — Improper cooling methods observed. Noodles cooked the day before were at 42 degrees in walk-in. Cold holding/storage must be 41 degrees or colder. Inadequate hand-washing facilities. Soap dispenser in disrepair.
