Reading inspection scores:
▪ Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
▪ Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
▪ Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — One employee had no current food-handler card. In salad area, diced tomato was 48 degrees one inch down.

Comments: Blue — Floor of kitchen is dilapidated in large areas. Evidence of insect infestation. Must obtain service of pest control contractor. Repackaged and reportioned foods must properly relabeled.

Comments: Red — Inadequate hand-washing facility. Hand sink was not accessible.

Comments: Red — Worker prepping ready-to-eat romaine lettuce using bare hands. Hand-washing sink in kitchen did not have disposable paper towels. Cook was using cloth towel hanging above sink to dry hands. Glass-door merchandiser for food storage needs thermometer. Sealed package of frozen eel being thawed in front hand-washing sink. The handles and doors of the small undercounter refrigerator have a great accumulation of food grime.

Comments: Red — Employee observed washing hands for less than 20 seconds. Employee used hand sink to rinse wiping cloth. Sliced ham in beverage cooler was 49 degrees. Cold holding/storage must be 41 degrees or colder.

Comments: Red — Person in charge did not know hot or cold holding temperatures, and did not have a current food-handler card. Sanitizer stored on boxed soda. All chemicals need to be stored away from and below food items. Blue — Takeout boxes stored near table-spray sanitizers. Wiping cloths had no sanitizer residue on them. Single-use items, such as spoons and forks, not properly stored for party use. No test strips were available for dishwasher. Ice machine has mold on front. Food prep employees need to have hair restraints. Employees making pizza had no hair restraints. Cutting boards are not cleanable. Kitchen needs general cleaning.
