Comments: Red — Hamburger patties were consistently undercooked to temperatures of 139-149 degrees. They must be cooked to a minimum temperature of 155 degrees.

March 29: Routine check (70 red; 23 blue)

Comments: Red — Five workers had expired foodhandler cards. Grill-side hand sink had no disposable towels. Bar sink blocked by stationary wine opener. Garlic prepared the day before was cooling in depth greater than two inches. Soup was 109 degrees. Hot holding must be 135 degrees or greater. Physical facility needs maintenance and cleaning. Blue — No sanitizer was prepared for wiping cloths. Employee was chewing gum during service of food. Ice scoops were not being used to fill beverage glasses. Knives in back prep area were not cleaned. No test strips were found for dishwasher. Re-inspection: A re-inspection was conducted on May 17, where there were 35 red violations and 13 blue violations noted.

May 20: Routine check (15 red; 3 blue)

Comments: Red — Briskets in walk-in cooler were at temperatures of 43-45 degrees. Cold holding/storage must be 41 degrees or colder. The temperature monitoring equipment to allow overnight cooking with the smoker/roaster is no longer functioning and cannot be used for overnight cooking until the components are repaired. Blue — There were eight pork shoulders being thawed in the food sink with being submerged in cold running water.

Comments: Red — Rice noodles were in a four-inch deep container at 67 degrees. In homestyle cooler, raw chicken is stored above vegetables in drawer below. Hand-wash sink has no hot water.

Comments: Red — Employees were observed not washing hands for the required 20 seconds. Blue — Sanitizer solution was too weak.
